Simple One Skillet Chicken Fajitas

- 567 g Boneless skinless chicken breast (20 oz)
- 1 Red bell pepper
- 1 Yellow bell pepper
- 198 g onion, yellow or red (7 oz)
- 2 tsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika (smoked or regular)
- 1/2 tsp black pepper (or to taste)
- 1/2 tsp salt (or to taste)
Combine fajita seasonings - 1 teaspoon each of chili powder, cumin, paprika, with salt and pepper to taste in small bowl. Optional: add pinch of cayenne pepper for super hot.
Cut bell peppers and onions into short, thin strips.
Cut chicken into small bite-sized pieces or thin strips.
Add oil to skillet on medium-high, add chicken and cook about 4 to 5 minutes or until browned. Let it sit at least a minute without stirring to get a good sear, then flip. Stir and flip occasionally for even cooking.
Add bell peppers and onions. Sprinkle seasoning over the chicken, bell peppers and onion and stir. Cook another 3 to 4 minutes, stirring regularly.
Optional: top with chopped cilantro.
Serve over rice or in tortillas (or wraps). If using tortillas/wraps, warm for 10 to 15 seconds in the microwave so they fold easier without cracking and hold together better.
